Who doesn’t love a cookie?

In my opinion, cakes and ice cream have their place, but nothing beats the feeling of biting into the freshly baked, delectable morsel of heaven that is a cookie.

It’s easy to buy “break and bake” cookies from the grocery store, but that kind of cookie doesn’t always do the job for me. The whole process of mixing the ingredients, forming the dough into shape on the pan and sliding them into the warm oven is therapeutic for me.

It is difficult to have the same experience in the kitchen-lounge of your dorm as the kitchen of your home, especially without the equipment you would normally use, but I have come up with a semi-homemade solution to this: cake cookies.

By using cake mix and three other easily accessible ingredients, you can have a large batch of cookies at hand within 30 minutes. Best of all, you don’t need any stand mixers or other sophisticated kitchen gadgets, just a good ol’ spoon.

This recipe is extremely easy, and when I made it for my Superbowl party, it was a real crowd pleaser. These cookies are perfect for roommate’s birthdays, or if you just need a treat to pick you up from all the stress school gives us. No matter what the occasion, I highly suggest you try them.

Ingredients:

1 box of Pillsbury (or your favorite brand) Funfetti cake mix

1/2 cup of canola oil

1/2 cup of egg beaters (or you could use 2 large eggs)

1 can of Pillsbury Funfetti frosting

Extras (tools):

1 large bowl

1 spoon

1 cup with flat, round bottom

2 cookie sheets

Directions:

Flatten the dough using the bottom of a rounded cup.

1. Pre-heat oven to 375 degrees.

2. In large bowl combine cake mix, oil, and eggs until mix is thoroughly moistened.

3. Shape dough into 1-inch balls, and place 2 inches apart on an ungreased baking sheet.

4. With the bottom of a round cup, press down to flatten dough to 1/4-inch.

5. Bake for 6 to 8 minutes, until edges are lightly browned.

6. Cool for 1 minute on the pan, then transfer to cool surface (plate) and spread frosting over the warm cookies. Immediately sprinkle with Funfetti.

7. Enjoy!
