Quesadillas are one of the simplest and most satisfying meals you can make. There are so many different flavor combinations that you can mix and match to whatever your taste buds desire. You could pretty much add anything you have in your tiny dorm refrigerator–that is, if you have anything in it, and it would make a delicious meal.

For the Monday night meal I have with my friend Dan every week, I chose to make quesadillas. Traditionally, we have chicken with some type of cheese and chopped peppers or other vegetable on the inside, and spicy salsa on the outside. This time, I wanted to take a different path and still have the spice, so I used buffalo sauce.

It took all of ten minutes to prepare, five minutes to cook, and three minutes to devour. In other words, they are really good and so easy to put together! This recipe makes a large serving, making it the perfect meal for you to enjoy with friends.

Easiest, Yummiest, Buffalo Chicken Quesadillas

Ingredients:

1 or 2 packages of pre-cooked frozen chicken slices (Perdue Shortcuts Carved Chicken Breast)*

3/4 cup buffalo sauce

1 1/2 cups shredded Mexican cheese (Trio of Monterey Jack, Cheddar, and Pepper Jack)

2  12-inch (large) tortillas

Blue cheese dressing

* A rotisserie chicken shredded could be used as a substitute

Extras:

Directions:

1. Pre-heat oven to 400°

1. Place chicken on microwavable dish with paper towel on top. Cook on high until warm all the way through, 1 to 3 minutes.

2. Stir chicken, cheese, and buffalo sauce in bowl until all ingredients are covered in sauce. (May need less sauce than given, depending on what degree of spiciness you want. )

3. Distribute half of the mix onto the half of one tortilla, and repeat with other half of the mix onto the other tortilla. Fold over half that does not have the mix on it, and press down. Repeat for other tortilla. (You could also place all of the mix on in the middle of one tortilla and place the other tortilla on top.)

4. Place both on baking sheet and cook in the oven for 5 to 8 minutes, until cheese is melted.

5. Cut each quesadilla into 4 wedges, and serve with blue cheese on the side.
