Fairfield University has announced a new local partnership with Silvermine Coffee Roasters this year’s National Coffee Day. Partnering with the rising star in Norwalk’s coffee scene, Fairfield University will now have its own unique coffee blend called Red Sea Coffee.

This collaboration has come as a pleasant surprise throughout Fairfield. First-year Dylan Lounsbury said, “I am so excited about Red Sea Coffee!”

Red Sea Coffee, crafted from responsibly sourced beans, is available for pre-purchase online through Silvermine Coffee Roasters and will soon be found at The Pantry in downtown Fairfield, Conn. When purchasing, buyers can choose a selection of beans from ground to whole. The partnership not only brings quality coffee to the university but also highlights Fairfield’s commitment to fostering meaningful partnerships with local businesses—a theme evident in Fairfield’s leadership as administrative offices expand into the town of Fairfield.

The choice of the name “Red Sea” for the coffee pays homage to the spirited Red Sea student fan section at Fairfield University—a long-standing tradition that embodies the enthusiasm, energy and pride of the Stags community. This naming choice reflects the vibrant community spirit that has been a hallmark of Fairfield for decades.

“We are delighted to welcome Silvermine Coffee Roasters into our Fairfield community,” said Jennifer Anderson, vice president of Marketing and Communications at Fairfield University. “This partnership not only provides our campus with exceptional coffee but also reinforces Fairfield University’s dedication to supporting local businesses and cultivating sustainable relationships within our community.”

The collaboration enhances both student life and Norwalk’s growing coffee culture. By serving Silvermine’s artisan coffee, Fairfield University aims to create a more enriching atmosphere for students, faculty and staff. This initiative underscores the university’s broader commitment to creating localized connections that foster community engagement.

Thomas Morsanutto, the owner of Silvermine Coffee Roasters and a Norwalk native, expressed his excitement about the partnership. As a Fairfield Prep alumni from the Class of 2004, he has deep roots in the area. “I’m very excited to be working with Fairfield University and providing coffee across campus,” he said to Fairfield’s Public Relations team. “I have so many great memories from my time at Prep and am honored to share my passion with the next generation of students.”

The timing of this announcement aligned perfectly with National Coffee Day, a celebration that emphasizes the joy and culture surrounding coffee. The post announcing Fairfield and Silvermines coffee collaboration has obtained over 37,000 views on instagram alone. 

Silvermine Coffee Roasters first made headlines locally in the fall of 2023 when it opened in Norwalk’s Silvermine district. Known for offering a selection of roasted blends that reflect both tradition and innovation, the coffee shop quickly became a destination for coffee lovers in the region. Their commitment to high-quality, responsibly sourced coffee has set a new standard in the area, making them a perfect partner for Fairfield University.

Coffee doesn’t seem to be the last market Fairfield University wants to tap into this year, as last Friday the University announced a partnership with Elicit Brewing Company located in downtown Fairfield. This beer has the title ‘42 Brew, paying homage to the year Fairfield University was founded. 

“I am so excited to buy Red Sea Coffee for my grandma Phyllis for this holiday season,” said Cate Quiñones ‘28. “It’s a great way to connect Fairfield to her.”
