In spite of it being St. Patty’s day, I wanted to make a green recipe for you. Since many the Fairfield student body will be celebrating the day with beer and corned beef (maybe the beer for me, no thank you to the corned beef),  I thought it would be appropriate to supply you with a recipe for a dip you can share with your buddies and lads while sipping a Guinness and watching the Boondock Saints.

So I thought to myself, “what dip is green and pairs well with a beer?” Guacamole is Mexican so that wouldn’t be very festive, but hot artichoke dip would be perfect! The green color from the artichokes and the gooey cheese pairs perfectly with whatever liquid substance you may be consuming, be it alcoholic or not. Just mix these four ingredients together and pop it in the microwave. In just 5 minutes, you’ll have a steaming batch of dip to enjoy with those who are lucky.

Piping Hot Artichoke Dip

Ingredients:

¼ cup sour cream

½ cup parmesan cheese, shredded

1 14oz. can of quartered artichoke hearts

1 garlic clove, minced

Crackers for dipping

Equipment:

Microwavable bowl

Plastic wrap, or cover for bowl that can be used in the microwave

Directions:

1.Mix all the ingredients in microwavable dish.

2. Cover with plastic wrap and microwave for 4 minutes, mixing half way through.

3. ENJOY! -This recipe is so good I wouldn’t be surprised if I found it on the other side of the rainbow, see for yourself!
