Whenever I visit my friends at different schools I like to bring a little treat. This past weekend I journeyed to upstate New York to visit my best friend Erin who goes to Siena College. I have been to Siena many times in the past, and have grown close to her roommates (shout out to TH 33!), so I wanted to make them something extra special. As I flipped through numerous recipes for cookies I want to try I stumbled upon a recipe from Pillsbury that sounded perfect- Peanut Butter Brownie cookies. Saying it out loud was like music to my ears and biting into one is what I would imagine dying and going to heaven will feel like. There is no special baking equipment needed; just some bowls, a spoon and your hands. The ingredients are also easily accessible, which makes it the perfect recipe for a college student to have on hand.

Unfortunately I had a little too much fun at Siena and misplaced my camera, which had pictures of my own cookies on it. However, they literally turned out exactly how these cookies look in this picture.

Pillsbury Peanut Butter Brownie Cookies

Ingredients:

1 package of fudge brownie mix (preferably Pillsbury brand)

¼ cup unsalted butter, melted

4oz. 1/3 less fat cream cheese, softened

1 egg

¾ cup powdered sugar

1 cup creamy peanut butter

1 can of chocolate frosting

½ cup dark chocolate chips

Directions:

1.Preheat oven to 350˚F. In a large bowl mix brownie mix, butter, cream cheese and egg until well blended to a sticky consistency. Drop 1 tablespoon of dough onto ungreased cookie sheet, 2 inches apart (should make around 24 cookies in total). Flatten dough to round cookie shape.

2.Mix peanut butter and powdered sugar in small bowl until it is well blended and has a crumbly consistency. Form mixture into 24 separate balls, about the size of one rounded teaspoon. Press one ball into the center of each prepared dough. Bake for 12 minutes until edges are set.

3. Cool on the cookie sheet for half an hour. Spread frosting on top of each peanut butter ball to conceal the peanut butter component of the cookie.

4. ENJOY!
